Scrambled Egg Sandwich

Wyatt’s gotten the hang of making his own favorite breakfast. We’re still working on opening and closing the plastic ziplock baggy with the cheese in it (it really is challenging when using mostly one hand!), and splitting an English muffin can be slow going- but I think with practice he’ll get the hang of it. Once we figure out the best technique we’ll try and do a demo.

Preparing this dish is mostly about the order of things, and having tools and ingredients ready before you start. Having the toasted muffin ready to go for when the eggs are completed means you only have to gently flip the eggs on top of them, rather than moving the eggs twice.

 

Scrambled Egg Sandwich

Serves 1

Ingredients

  • 1 egg
  • 1 tbsp milk (approx)
  • butter for coating pan (optional)
  • 1 english muffin (toasted)
  • 1 slice of your favorite cheese
  • hot sauce (optional)

Directions

  1. Prepare an English muffin in the toaster. Put toasted muffins on a plate.
  2. Crack and scramble egg.
  3. Add milk and scramble more.
  4. Turn on stove to high to warm up pan.
  5. Butter pan (optional)
  6. Turn heat to medium.
  7. Pour eggs into pan.
  8. Stir and fold the eggs in the pan until eggs are no longer runny (shiny).
  9. Turn off heat.
  10. Pour eggs onto one side of the English muffin.
  11. Pour on hot sauce (optional)
  12. Place slice of cheese on eggs.
  13. Put the other side of the English muffin on top of the cheese.

Super Smoothies

We love our smoothies! Wyatt developed this recipe on his own, and was very proud how it fit perfectly in the blender.

Challenges & Solutions:

  • Measuring ingredients- This can get messy at times, but with practice Wyatt’s getting better and better. We have flat bottomed measuring cups, so he can place them flat on the counter and pour ingredients in (when that works)
  • Blender- Somewhere, someday I will find the lid to the blender- for now we’re just using a little plate on top to keep smoothies from flying everywhere! Bonus, he HAD to use his affected hand to hold the plate in place.

Super Smoothies

Makes 6
Ingredients

  • 2 cups of your favorite berries (frozen)
  • 1 1/2 cup orange juice
  • 1 cup vanilla yogurt
  • 1 banana

Directions

  1. Put all of the ingredients in the blender and blend until smooth.
  2. Enjoy!
